In 2003, the Materials Research Society published a special issue of its bulletin dedicated to adhesives. The whole set of articles are interesting and to a level of non-specialist readers. You have however to be a subscriber to access the journal. I am posting here the two articles that I authored.

For more technical articles focusing on Pressure-Sensitive-Adhesives, I can recommend the article published in : Adhesion Science Science and Engineering, Vol I: The Mechanics of Adhesion, D.A. Dillard and A.V. Pocius eds. Elsevier. pp. 535-576.
The rest of the two volumes series is excellent and is well worth a purchase for a comprehensive and modern view of adhesion science.
